High-throughput characterisation of fatty acids using GC×GC–FID for reliable nutritional labelling of food

The analysis of fatty acids in food is important for assessing nutritional content, and quantitation of both cis- and trans-fatty acids is particularly important.

However, the sample preparation to form GC-amenable fatty acid methyl esters (FAMEs) is often time-consuming and labour-intensive, and conventional 1D GC struggles to resolve all components, meaning certain fatty acids may be overestimated.

Here, we apply one-step microwave-assisted extraction and derivatisation prior to enhanced separation by flow-modulated GC×GC–FID for faster, greener and more reliable nutritional labelling of food.
